Ingredients

  • 2 lbs Pork shoulder
  • 3 pieces Lemongrass stalks
  • 4 pieces Garlic cloves, minced
  • 1 large Red onion, chopped
  • 3 pieces Bay leaves
  • 0.25 cup Low sodium soy sauce
  • 2 tablespoons Fish sauce
  • 1 teaspoon Freshly cracked black pepper
  • 1 teaspoon Salt
  • 1 cup Vegetable stock
  • 2 tablespoons Olive oil
  • 1 medium Lemon, sliced
  • 2 pieces Spring onions, for garnish

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the pork shoulder and pat it dry with paper towels. Using a sharp knife, score the skin in a crisscross pattern, being careful not to cut into the meat.

Step 3

Stuff the pork shoulder with lemongrass, minced garlic, and chopped onion.

Step 4

In a small bowl, mix low sodium soy sauce, fish sauce, and black pepper. Rub this mixture all over the pork, ensuring the marinade gets into the scored skin.

Place the marinated pork in a large roasting pan. Add the bay leaves and vegetable stock to the pan.
