Cook the whole-grain lasagna noodles according to package instructions, then drain and set them aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
Add the lean ground turkey to the skillet and cook until fully browned, breaking it into small pieces with a spatula, about 7-8 minutes.
Stir in the marinara sauce, dried Italian seasoning, salt, and pepper. Reduce heat and let it simmer for 5 minutes.
In a medium bowl, combine the fat-free ricotta cheese, chopped spinach, egg, and 1/4 cup of the low-fat mozzarella cheese. Mix until well combined.
