  • 50 grams Unsalted butter
  • 75 grams Low-fat Greek yogurt
  • 60 grams Granulated sugar
  • 1 teaspoon Pure vanilla extract
  • 1 large Egg white
  • 30 grams Powdered sugar
  • 100 grams Raspberry or strawberry jam

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a medium bowl, sift together the flour, cornstarch, baking powder, and salt.

Step 3

In a separate large bowl, beat the unsalted butter with an electric mixer on medium speed until smooth and creamy, about 1-2 minutes.

Step 4

Add the granulated sugar to the butter and continue to beat until the mixture is light and fluffy.

Step 5

Mix in the low-fat Greek yogurt, vanilla extract, and egg white until fully incorporated.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

Step 7

Transfer the dough into a piping bag fitted with a star-shaped nozzle.

Step 8

Pipe small rosettes of dough, about 2 inches apart, onto the prepared baking tray.

Step 9

Using the back of a small spoon, make a small indentation in the center of each rosette.

Step 10

Fill each indentation with a small amount of raspberry or strawberry jam.

Step 11

Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden.

Step 12

Let the biscuits cool on the baking tray for a few minutes before transferring them to a wire rack.

Step 13

Once cooled, dust the biscuits lightly with powdered sugar before serving.
