Ingredients

  • 6 medium zucchini
  • 250 grams lean ground turkey
  • 100 grams white rice
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 400 grams diced tomatoes
  • 250 ml water
  • 1 tablespoon olive oil
  • 1 teaspoon allspice
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons fresh mint, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Wash and dry the zucchini, then cut off the tops. Hollow out the zucchinis using a corer, being careful not to pierce the skin.

Step 2

In a large bowl, combine the ground turkey, rice, chopped onion, minced garlic, allspice, cinnamon, chopped mint, salt, and pepper. Mix well until the ingredients are fully incorporated.

Step 3

Stuff each hollowed zucchini with the turkey mixture, leaving a little room at the top for the rice to expand as it cooks.

Step 4

In a large pot over medium heat, heat the olive oil. Add the tomato paste and cook for 2 minutes, stirring constantly.

Step 5

Add the diced tomatoes and water to the pot, stirring well to combine.

Step 6

Carefully place the stuffed zucchinis in the sauce, ensuring they are snug and upright.

Step 7

Bring the sauce to a slow boil, then cover the pot, reduce the heat to low, and simmer for 50 minutes or until the zucchinis and rice are cooked through.

Step 8

Check occasionally, adding a little more water if the sauce becomes too thick.

Step 9

Once cooked, remove the zucchinis and let them rest for a few minutes before serving. Serve warm with a spoonful of sauce drizzled on top.
