Ingredients

  • 400 grams Korean rice cakes (tteok)
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Gochujang (Korean red chili paste)
  • 1 teaspoon Gochugaru (Korean red pepper flakes)
  • 1 tablespoon Honey
  • 2 units Garlic cloves, minced
  • 2 cups Water
  • 1 medium Carrot, sliced into thin strips
  • 2 stalks Green onions, chopped
  • 100 grams Low-fat fish cake strips (optional)
  • 1 teaspoon Sesame oil
  • 1 teaspoon Sesame seeds

Directions

Step 1

Soak the Korean rice cakes in warm water for about 10 minutes to soften them if they are not freshly made.

Step 2

While the rice cakes are soaking, prepare all other ingredients: mince the garlic, slice the carrot into thin strips, and chop the green onions.

Step 3

In a large pan, combine water, low-sodium soy sauce, gochujang, gochugaru, honey, and minced garlic. Stir well to make a consistent sauce.

Step 4

Bring the sauce to a boil over medium-high heat. Once boiling, drain the soaked rice cakes and add them to the sauce.

Step 5

If using fish cakes, slice them into strips and add to the pan along with the carrot slices. Stir well to coat everything in the sauce.

Step 6

Lower the heat to medium and let the dish simmer for about 15 minutes, stirring occasionally, until the rice cakes become soft and chewy, and the sauce thickens to a rich consistency.

Step 7

Add the chopped green onions and sesame oil to the pan, and stir for another minute to combine flavors.

Step 8

Transfer the Tteokbokki to a serving dish and sprinkle with sesame seeds for garnish.

Step 9

Serve hot and enjoy your low-fat Korean Rice Cakes.
