Ingredients

  • 300 grams Korean rice cakes (tteok)
  • 2 cups Water
  • 1 tablespoon Low-sodium fish sauce
  • 2 tablespoons Gochujang (Korean chili paste)
  • 1 teaspoon Gochugaru (Korean chili flakes)
  • 1 tablespoon Soy sauce, reduced sodium
  • 2 cloves Garlic, minced
  • 1 tablespoon Brown sugar
  • 2 pieces Green onions, sliced
  • 1 medium Carrot, thinly sliced
  • 150 grams Low-fat soft tofu, cubed
  • 1 teaspoon Sesame seeds

Directions

Step 1

Soak the rice cakes in cold water for about 10 minutes if they are frozen or hard, to soften them.

Step 2

In a large non-stick pan, combine the water, low-sodium fish sauce, gochujang, gochugaru, soy sauce, minced garlic, and brown sugar. Stir well to mix all the ingredients until the brown sugar dissolves.

Step 3

Bring the sauce mixture to a simmer over medium heat.

Step 4

Add the sliced carrot and continue to simmer for 2-3 minutes until the carrot starts to soften.

Step 5

Drain the rice cakes and add them to the sauce. Stir to ensure they are evenly coated with the sauce. Continue cooking for 8-10 minutes, stirring occasionally, until the rice cakes become soft and chewy.

Step 6

Gently add the low-fat soft tofu cubes and carefully stir to incorporate them into the dish. Cook for an additional 2-3 minutes until the tofu is heated through.

Step 7

Add the sliced green onions and give the mixture one final gentle stir.

Step 8

Transfer to a serving dish and garnish with sesame seeds before serving.

Step 9

Enjoy your flavorful and healthier Tteokbokki as a main dish or snack!
