Ingredients

  • 500 grams Ground turkey breast
  • 250 grams Ground beef (95% lean)
  • 1 medium Onion, grated
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Turmeric
  • 0.5 teaspoon Ground coriander
  • 1 large Egg white
  • 2 teaspoons Sumac (optional, for serving)

Directions

Step 1

In a large mixing bowl, combine the ground turkey and ground beef thoroughly.

Step 2

Add grated onion, minced garlic, and chopped parsley to the meat mixture. Mix until incorporated.

Step 3

Season the mixture with salt, black pepper, turmeric, and ground coriander.

Step 4

Add the egg white to the bowl as a binder, ensuring it is fully mixed in with the meat and seasonings.

Step 5

Divide the mixture into 8 equal portions. Gently mold each portion around a metal skewer to form a long, flattened kebab shape, about 6 inches long. Ensure the mixture is packed tightly to prevent it from falling apart during cooking.

Step 6

Preheat an outdoor grill or grill pan over medium-high heat. If using a grill, lightly oil the grates.

Step 7

Place the skewered kebabs on the grill and cook for approximately 6-8 minutes on each side, turning occasionally. The kebabs should be cooked through and slightly charred on the edges.

Step 8

Once cooked, remove the koobideh from the grill and let them rest for a couple of minutes.

Step 9

Serve immediately, garnished with a sprinkle of sumac if desired, along with warm pita bread, rice, or a fresh salad.
