Ingredients

  • 300 g All-purpose flour
  • 200 ml Water
  • 1 tsp Salt
  • 500 g Lean ground turkey or chicken
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 2 tbsp Fresh cilantro, chopped
  • 1 tsp Ground cumin
  • 0.5 tsp Paprika
  • 0.5 tsp Black pepper
  • 120 ml Chicken broth
  • 1 tbsp Low-sodium soy sauce
  • 1 tbsp Vegetable oil

Directions

Step 1

In a large bowl, combine the flour and salt. Gradually add the water while stirring until the mixture forms a sticky dough. Knead the dough on a floured surface for about 5-7 minutes or until it's smooth and elastic. Cover with a cloth and let it rest for 30 minutes.

Step 2

In another bowl, mix the ground turkey or chicken, chopped onion, minced garlic, chopped cilantro, ground cumin, paprika, black pepper, chicken broth, and low-sodium soy sauce. Mix until all ingredients are well incorporated.

After the dough has rested, divide it into small, equal-sized balls, about 40 grams each.

Roll each ball into a thin circle approximately 3-4 inches in diameter using a rolling pin. The edges should be thinner than the center.

Place a tablespoon of the filling mixture in the center of each dough circle.

To form the khinkali, pinch the edges of the dough together to form pleats, gathering the edges and twisting to seal at the top.

Cook for 10-12 minutes, or until the dumplings float and the dough is fully cooked. The meat inside should reach an internal temperature of 74°C (165°F).
