Ingredients

  • 200 grams All-purpose flour
  • 50 grams Cold unsalted butter
  • 100 grams Low-fat yogurt
  • 150 grams Kaya (coconut jam)
  • 2 Pandan leaves
  • 50 milliliters Water
  • 1 pinch Salt
  • 1 beaten Egg

Directions

Step 1

Preheat the oven to 200°C (392°F).

Step 2

Slice the pandan leaves into small pieces and blend them with 50 milliliters of water in a blender until a smooth mixture is obtained, then strain to extract juice. Set the juice aside.

Step 3

In a large mixing bowl, sift the all-purpose flour and add a pinch of salt.

Step 4

Cut the cold unsalted butter into small cubes and rub it into the flour using your fingertips until the mixture resembles coarse crumbs.

Step 5

Mix the low-fat yogurt into the butter-flour mixture using a spatula until combined. The dough should just come together.

Step 6

Roll the dough into a ball, cover it with plastic wrap, and refrigerate for 15 minutes for the gluten to relax.

Step 7

On a lightly floured surface, roll the chilled dough to about 3mm thick and cut out circles with a 10cm round cutter. You should have about 8 circles.

Place 1 tablespoon of Kaya coconut jam in the center of each dough circle.

Brush a little water around the edges of the dough circle, fold it over to encase the filling, and crimp the edges with a fork to seal.

Step 10

Place the puffs on a lined baking tray. Brush the tops with beaten egg for a golden finish.

Bake in the preheated oven for 15 to 20 minutes or until the puffs are golden brown.

Step 12

Allow to cool slightly on a wire rack before serving. Enjoy your low-fat kaya puffs warm or at room temperature.
