Preheat your oven to 180°C (350°F).
Melt the low-fat butter or margarine in a small saucepan over low heat or in a microwave until completely melted, then set aside to cool slightly.
In a mixing bowl, combine the ground almonds, chopped walnuts, ground cinnamon, and vanilla extract. Stir well to combine this nut filling.

Bring the syrup to a boil, stirring until the sugar has dissolved, then reduce the heat and let it simmer for 8-10 minutes until slightly thickened. Allow the syrup to cool a bit.
Once the kataifi is baked, remove from oven and immediately pour the warm syrup evenly over the kataifi rolls.
Allow the kataifi to soak in the syrup and cool to room temperature before serving.
