Ingredients

  • 1000 g Potatoes
  • 300 ml Low-fat milk
  • 2 tbsp Cornstarch
  • 100 g Low-fat sour cream
  • 100 g Grated low-fat cheese
  • 1 medium Onion
  • 2 units Garlic cloves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Nutmeg
  • 1 tbsp Olive oil
  • 1 tbsp Chopped parsley

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Peel and thinly slice the potatoes, preferably using a mandoline for even thickness.

Step 3

Chop the onion finely and mince the garlic cloves.

Step 4

In a non-stick frying pan, heat the olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent, around 5 minutes.

Step 5

In a bowl, mix the low-fat milk with cornstarch until fully dissolved. Add the sautéed onions and garlic mixture, along with the low-fat sour cream, salt, black pepper, and nutmeg. Stir until well combined.

Step 6

In an ovenproof dish, layer half of the sliced potatoes evenly and pour half of the milk mixture over the potatoes, ensuring even distribution.

Step 7

Layer the remaining potato slices and pour the remaining milk mixture over the top.

Step 8

Cover with aluminum foil and bake in the preheated oven for 40 minutes.

Step 9

Remove the foil and sprinkle the grated low-fat cheese evenly over the top.

Step 10

Return to the oven, uncovered, and bake for an additional 20 minutes until the cheese is melted and the top is golden brown.

Step 11

Remove from the oven and let the gratin rest for 5 minutes before serving.

Step 12

Garnish with freshly chopped parsley and serve warm.
