Ingredients

  • 250 grams all-purpose flour
  • 7 grams instant yeast
  • 150 milliliters skim milk
  • 25 grams honey
  • 50 grams unsweetened applesauce
  • 1 teaspoon salt
  • 2 tablespoons ground cinnamon
  • 50 grams brown sugar
  • 1 large egg (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the flour and salt. Add the instant yeast, ensuring it's not directly in contact with the salt for optimal activation.

Step 2

Warm the skim milk in a small saucepan until it's lukewarm (around 37°C) and then combine it with the honey. Stir until the honey is dissolved.

Step 3

Create a well in the center of the flour mixture and pour in the milk and honey mixture along with the unsweetened applesauce.

Step 4

Mix until a soft dough forms, then knead on a floured surface for about 5-6 minutes until the dough is smooth and elastic.

Step 5

Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 60 minutes or until it has doubled in size.

Step 6

While the dough is rising, prepare the filling by mixing the ground cinnamon and brown sugar in a small bowl.

Step 7

Once the dough has risen, roll it out on a lightly floured surface to a rectangle about 12x15 inches in size.

Step 8

Sprinkle the cinnamon and sugar mixture evenly over the rolled-out dough, leaving a small border on one long edge.

Step 9

Gently roll the dough starting from the long edge with the cinnamon sugar mixture, ending at the border. Pinch the edges to seal the roll.

Step 10

Slice the rolled dough into 12 even pieces and place them in a prepared baking dish lined with parchment paper.

Step 11

Cover the dish with a damp cloth and let the rolls rise for another 20-30 minutes until they look puffy.

Step 12

Preheat your oven to 180°C (350°F).

Step 13

Beat the egg and lightly brush the tops of the cinnamon rolls to create a golden crust while baking.

Step 14

Bake for 12-15 minutes until the rolls are lightly golden.

Step 15

Allow the rolls to cool slightly before serving. Enjoy the light and aromatic treat with a cup of your favorite tea or coffee.
