Ingredients

  • 4 cups Fresh kale
  • 4 cups Fresh baby spinach
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.25 cup Red onion
  • 2 tablespoons Lemon juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Sunflower seeds

Directions

Step 1

Wash and thoroughly dry the kale and spinach. Remove the tough stems from the kale and chop the leaves into bite-sized pieces. Place both the kale and spinach in a large salad bowl.

Halve the cherry tomatoes and add them to the bowl.

Step 3

Peel the cucumber and cut it into thin slices. Add the cucumber slices to the salad bowl.
