Ingredients

  • 500 grams Pumpkin
  • 1 bottle Cooking spray
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 whole Green chili
  • 1 inch piece Ginger
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 200 ml Water
  • 2 tablespoons Cilantro leaves
  • 1 tablespoon Lemon juice

Directions

Step 1

Peel the pumpkin, remove the seeds, and cut it into small cubes.

Step 2

Finely chop the green chili and grate the ginger.

Step 3

Heat a large non-stick pan and lightly spray it with cooking spray.

Step 4

Add the mustard seeds and cumin seeds to the pan. Let them crackle on medium heat for a few seconds.

Step 5

Add chopped green chili and grated ginger, sauté for a minute until fragrant.

Step 6

Add the cubed pumpkin to the pan and stir well to combine with the spices.

Step 7

Sprinkle turmeric powder, red chili powder, coriander powder, and salt over the pumpkin and mix to coat the pumpkin pieces evenly.

Pour in the water, cover the pan with a lid, and let it cook on low to medium heat for about 15 minutes or until the pumpkin is tender. Stir occasionally to prevent sticking.
