Ingredients

  • 500 g Ground venison
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 1 large Egg white
  • 2 tbsp Low-fat plain yogurt
  • 3 tbsp Oat bran
  • 1 tbsp Worcestershire sauce
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley
  • 1 tsp Olive oil

Directions

Step 1

Finely chop the onion and garlic cloves. Set aside.

Step 2

In a large mixing bowl, combine ground venison, onion, garlic, egg white, low-fat plain yogurt, oat bran, Worcestershire sauce, salt, and black pepper.

Step 3

Chop the fresh parsley and add it to the mix. Use your hands to gently combine all ingredients until evenly distributed. Be careful not to over-mix to maintain a tender texture.

Step 4

Form the mixture into 4 even-sized patties, about 1 cm thick.

Step 5

Heat olive oil in a non-stick skillet over medium heat. Swirl the oil to ensure the skillet is evenly coated.

Step 6

Place the patties in the skillet. Cook each side for about 4-5 minutes until they are browned and cooked through. Alternatively, you can grill the patties over medium-high heat for the same time.

Step 7

Remove the patties from the heat and allow them to rest for a couple of minutes before serving to ensure they stay juicy.

Step 8

Serve hot, alongside whole-grain buns or salad greens for a complete, health-conscious meal.
