Ingredients

  • 1 pound boneless skinless chicken breast
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons low sodium soy sauce
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium red onion
  • 8 wooden skewers

Directions

Step 1

Start by soaking the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.

Step 2

Cut the chicken breast into 1-inch cubes and set aside.

Step 3

In a large bowl, mix together olive oil, lemon juice, soy sauce, minced garlic, ground cumin, ground coriander, smoked paprika, black pepper, and salt to make the marinade.

Step 4

Add chicken cubes to the marinade, mix well to ensure even coating, then cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.

Step 5

While the chicken is marinating, prepare the vegetables. Cut the red and green bell peppers into 1-inch pieces and the red onion into similar-sized chunks.

Step 6

Once the chicken is marinated, thread the chicken, red bell pepper, green bell pepper, and red onion pieces alternately onto the soaked skewers.

Step 7

Preheat a grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

Step 8

Place the prepared skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Step 9

Once cooked, remove the skewers from the grill and let them rest for a couple of minutes before serving.

Step 10

Serve the kebabs immediately alongside your choice of sides or as a filling inside pitas with a dollop of yogurt for a refreshing touch.
