Ingredients

  • 200 g all-purpose flour
  • 1 tsp baking powder
  • 85 g unsalted butter, softened
  • 50 g granulated sugar
  • 1 piece egg, large
  • 1 tsp vanilla extract
  • 80 g low-fat strawberry jam
  • 10 g icing sugar, for dusting

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, sift together the all-purpose flour and baking powder. Set aside.

Step 3

In a large mixing bowl, cream the unsalted butter and granulated sugar together until light and fluffy using an electric mixer, about 3-4 minutes.

Beat in the egg and vanilla extract until well combined.

Gradually mix in the flour mixture until a soft dough forms.

Once cooled, spread about 1 teaspoon of low-fat strawberry jam onto each whole cookie disc and top with a cookie ring, pressing gently to adhere.
