Ingredients

  • 2 cups whole wheat flour
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 0.75 cup water
  • 1 tablespoon honey
  • 0.5 cup low fat cream cheese
  • 2 whole fresh jalapenos
  • 0.5 cup reduced-fat shredded cheese blend
  • 1 egg white
  • 0 non-stick cooking spray

Directions

Step 1

In a large bowl, combine whole wheat flour, instant yeast, and salt. Mix well.

Step 2

In a separate bowl, heat water until warm but not hot. Add honey and stir until dissolved.

Step 3

Pour the warm water mixture into the flour mixture and stir to form a soft dough.

Step 4

Knead the dough for about 10 minutes, either by hand on a floured surface or using a mixer with a dough hook, until the dough is smooth and elastic.

Step 5

Shape the dough into a ball and place it in a lightly greased bowl. Cover with plastic wrap and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 6

Meanwhile, slice the jalapenos into thin rings, removing seeds for less heat if desired.

Step 7

Once the dough has risen, divide it into four equal pieces. Shape each piece into a ball, then use your finger to poke a hole through the center, stretching to form bagel shapes.

Step 8

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 9

Bring a large pot of water to a boil, then reduce to a simmer. Boil each bagel for 1 minute on each side, then remove and drain on a towel.

Step 10

Place the bagels on the prepared baking sheet and brush with egg white for shine.

Step 11

Spread a layer of low fat cream cheese on top of each bagel. Top evenly with sliced jalapenos and sprinkle with shredded cheese.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and the cheese is bubbly.

Step 13

Remove from the oven and let cool on a wire rack before serving.
