Ingredients

  • 3 cloves Garlic (minced)
  • 2 medium Carrots (peeled and diced)
  • 2 stalks Celery stalks (diced)
  • 1 medium Zucchini (diced)
  • 28 oz Canned crushed tomatoes (no salt added)
  • 4 cups Low-sodium chicken broth
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.25 tsp Red pepper flakes (optional)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 4 cups Spinach (fresh)
  • 2 tbsp Fresh parsley (chopped, optional for garnish)
  • 2 tbsp Grated Parmesan cheese (optional for serving)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 2

Add the ground turkey to the pot and cook until browned, breaking it up with a wooden spoon. This should take about 5 minutes. Once cooked, remove the turkey from the pot and set aside.

Step 3

In the same pot, add the diced onion, garlic, carrots, and celery. Sauté the vegetables for 5-7 minutes until softened.

Add the zucchini to the pot and cook for an additional 3 minutes.

Return the cooked turkey to the pot and stir to combine with the vegetables.
