Ingredients

  • 150 grams tapioca flour
  • 50 grams all-purpose flour
  • 250 ml warm water
  • 100 grams chicken breast (boneless, skinless)
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon white pepper
  • 0.5 teaspoon sugar
  • 1 tablespoon chopped scallions
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon chili sauce

Directions

Step 1

In a mixing bowl, combine 150 grams of tapioca flour and 50 grams of all-purpose flour.

Step 2

Chop the 100 grams chicken breast into very small pieces, or alternatively, grind or mince using a food processor.

Step 3

Add the minced chicken, 2 finely chopped garlic cloves, 1 teaspoon salt, 0.5 teaspoon white pepper, and 0.5 teaspoon sugar into the flour mixture.

Step 4

Pour in 250 ml of warm water gradually, stirring constantly with a spoon until it forms a thick dough.

Step 5

Knead the dough by hand until smooth and elastic. If necessary, add more tapioca flour if the dough feels too sticky.

Divide the dough into small balls, about 2-3 cm in diameter.

Bring a steamer pot to a slow boil. Steam the cilok balls for about 20 minutes or until they become translucid and firm.
