Ingredients

  • 1 cup Sushi rice
  • 1.25 cups Water
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 8 pieces Inari tofu pockets
  • 2 tablespoons Low-fat soy sauce
  • 1 tablespoon Mirin
  • 1 tablespoon Sesame seeds

Directions

Step 1

Rinse the sushi rice in a fine mesh sieve under cold water until the water runs clear to remove excess starch.

Step 2

Combine the rinsed rice and 1.25 cups of water in a medium saucepan. Cover and bring to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to low and simmer for 18-20 minutes, or until the water is absorbed and the rice is tender.

Step 4

Remove from heat and let the rice sit, covered, for 10 minutes to steam.

Step 5

While the rice is cooking, prepare the vinegar mixture by combining rice vinegar, sugar, and salt in a small saucepan over low heat. Stir until the sugar and salt are dissolved, then remove from heat and let cool.
