  • 1 teaspoon ground caraway seeds
  • 400 grams diced tomatoes, canned
  • 1.5 liters beef broth, low sodium
  • 3 potatoes, peeled and cubed
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat. Add the beef cubes, seasoning them lightly with salt and pepper, and brown them on all sides for about 5-7 minutes. Remove the beef and set aside.

In the same pot, add the chopped onions and cook until they are soft and translucent, about 5 minutes.

Add the minced garlic, sliced carrots, and diced red bell pepper to the onions, cooking and stirring for another 3 minutes.
