Ingredients

  • 150 grams reduced-fat feta cheese
  • 200 ml evaporated skim milk
  • 2 tablespoons aji amarillo paste
  • 1 tablespoon olive oil
  • 1 large garlic clove
  • 0.5 teaspoon salt
  • 4 pieces crackers (low-fat, whole wheat)
  • 1 tablespoon lemon juice

Directions

Step 1

Peel a large clove of garlic and set it aside.

Step 2

In a blender, combine the reduced-fat feta cheese, evaporated skim milk, aji amarillo paste, and olive oil.

Step 3

Roughly break the low-fat, whole wheat crackers into smaller pieces for easier blending.

Step 4

Add the garlic clove, salt, and broken crackers to the blender with the other ingredients.

Step 5

Blend on medium speed until all the ingredients are smoothly combined; the mixture should be creamy and thick.

Step 6

Add the lemon juice and blend for another 30 seconds.

Step 7

Taste the sauce and adjust the salt if necessary.

Step 8

If the sauce is too thick, add a little more evaporated skim milk and blend again until you reach your desired consistency.

Step 9

Transfer the sauce to a serving bowl. It can be served warm, over boiled potatoes or vegetables, or chilled, as a dip for crudité and crackers.

Step 10

Store any leftovers in a covered container in the refrigerator for up to 3 days.
