Ingredients

  • 500 grams all-purpose flour
  • 7 grams instant yeast
  • 250 milliliters skim milk
  • 1 large egg
  • 1 large egg white
  • 50 grams sugar
  • 5 grams salt
  • 30 milliliters canola oil
  • 1 teaspoon lemon zest
  • 50 grams raisins (optional)
  • 2 tablespoons poppy seeds or sliced almonds (for garnish, optional)

Directions

Step 1

In a large mixing bowl, combine the flour, instant yeast, sugar, and salt, mixing well with a whisk.

Step 2

In a separate bowl, whisk together the skim milk, whole egg, egg white, canola oil, and lemon zest until fully combined.

Step 3

Create a well in the center of the dry ingredients and pour the wet ingredients into it.

Step 4

Using a wooden spoon or a stand mixer with a dough hook, mix the ingredients until they form a rough dough.

Step 5

Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic. If using a stand mixer, knead with the dough hook attachment on medium speed for about 6-8 minutes.

Step 6

Form the dough into a ball and place it in a lightly oiled bowl. Cover with a clean kitchen towel and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 7

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 8

After the dough has risen, punch it down gently and transfer it to a floured surface.

Step 9

Divide the dough into 4 equal parts. Roll each piece into a rope about 12 inches long.

Step 10

Join the ends of the ropes together at one end and braid them into a 4-strand braid. Tuck the ends under neatly for a clean finish.

Step 11

Transfer the braided loaf to the prepared baking sheet. If using, brush the top with a little water and sprinkle with poppy seeds or sliced almonds.

Step 12

Bake in the preheated oven for 20-25 minutes or until golden brown and the loaf sounds hollow when tapped.

Step 13

Remove the bread from the oven and allow it to cool on a wire rack before slicing. Enjoy your low-fat houska as is or toasted with a spread of your choice!
