  • 4 cups fresh spinach
  • 8 ounces low-fat cream cheese, softened

  • 2 cloves garlic, minced

  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 0.5 cup shredded part-skim mozzarella cheese
  • 1 spray olive oil cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a small baking dish with olive oil cooking spray and set aside.

Wash the fresh spinach thoroughly, then dry completely. Chop the spinach into small pieces.

In a large non-stick skillet over medium heat, lightly spray with olive oil cooking spray. Add the minced garlic and sauté for 1 minute until fragrant.
