In a large bowl, combine the flour, yeast, sugar, salt, cinnamon, nutmeg, and allspice.
Warm the milk to lukewarm, around 95°F (35°C), and stir in the applesauce and beaten egg.
Make a well in the center of the dry ingredients, then pour in the milk mixture and mix to form a rough dough.
Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
Add the raisins, currants, and orange zest to the dough, kneading until well distributed.
Place the dough in a lightly greased bowl, cover with a damp cloth, and leave to rise in a warm place for 1-2 hours or until doubled in size.
Gently punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball.
Place the dough balls on a baking tray lined with parchment paper, spacing them about 1 inch apart.
Cover again with a damp cloth and let stand for 30 minutes to rise.
Preheat the oven to 375°F (190°C).
To make the paste for the cross, mix 50g of flour with 2 tablespoons of water to form a thick paste.
Spoon the paste into a piping bag and pipe crosses on the top of each bun.
Bake in the preheated oven for 15-20 minutes until golden brown and cooked through.
While the buns are baking, gently heat the apricot jam until it becomes a thin glaze.
Once buns are baked, remove from oven and brush them with the warm apricot glaze to give a shiny finish.
Allow to cool on a wire rack before serving.
