Ingredients

  • 1.5 cups whole wheat flour
  • 0.5 cups all-purpose flour
  • 0.25 teaspoons salt
  • 0.25 cups olive oil
  • 1 tablespoons honey
  • 4 tablespoons cold water

Directions

Step 1

In a medium mixing bowl, combine the whole wheat flour, all-purpose flour, and salt. Mix well to evenly distribute the salt.

Step 2

Add the olive oil to the dry mixture and use a fork or pastry cutter to combine until the mixture becomes crumbly and coarse in texture.

Step 3

Add the honey and 3 tablespoons of cold water to the mixture. Stir gently to bring the dough together. If the dough is too dry, add the remaining tablespoon of cold water, one teaspoon at a time, until the dough holds together but is not sticky.

Step 4

Turn the dough out onto a lightly floured surface. Knead it gently 2–3 times to form a cohesive ball. Do not overwork the dough.

Step 5

Roll the dough out into a 12-inch circle using a rolling pin, lightly dusting with flour as needed to prevent sticking.

Step 6

Carefully transfer the rolled-out dough to a 9-inch pie plate. Press the dough gently into the bottom and up the sides of the plate, trimming any excess dough from the edges.

Step 7

Use a fork to prick the bottom of the crust to prevent bubbles from forming during baking.

Step 8

If pre-baking, bake the crust in a preheated oven at 375°F (190°C) for 8–10 minutes, or until lightly golden. Let it cool before adding your filling.

Step 9

If baking with a filling, follow your specific pie recipe's instructions for baking time and temperature.
