Wash and trim the ends off the zucchini. Grate them using a coarse grater. You will need approximately 2 medium zucchinis to get 2 cups.
In a large bowl, combine the all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir until well mixed.
