Ingredients

  • 2 pounds Turkey breast
  • 4 cups Water
  • 3 tablespoons Kosher salt
  • 2 tablespoons Brown sugar
  • 1 tablespoon Black peppercorns
  • 1 tablespoon Coriander seeds
  • 1 tablespoon Mustard seeds
  • 2 tablespoons Paprika
  • 4 Garlic cloves, crushed
  • 1 teaspoon Onion powder
  • 1 teaspoon Black pepper, freshly ground

Directions

Step 1

In a large pot, combine the water, kosher salt, and brown sugar. Stir until the salt and sugar are completely dissolved.

Step 2

Add the black peppercorns, coriander seeds, mustard seeds, crushed garlic cloves, and onion powder to the pot. Bring the mixture to a boil.

Step 3

Turn off the heat. Allow the mixture to cool to room temperature, and then refrigerate until chilled.

Once the brine is cold, place the turkey breast in the pot, ensuring it is fully submerged. Cover and refrigerate for at least 12 hours or overnight.

Preheat your oven to 300°F (150°C).

Remove the turkey breast from the brine and pat dry with paper towels.
