  • 4 cups ripe tomatoes

  • 1 medium red bell pepper

  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt

Directions

Step 1

Begin by washing the tomatoes, onion, and red bell pepper. Dice the tomatoes into small cubes and set aside.

Peel the onion and chop it finely. De-seed and chop the red bell pepper finely as well.

Step 3

Peel and grate the fresh ginger and finely mince the garlic cloves.

Step 4

In a large, heavy-bottomed saucepan or pot, combine the diced tomatoes, chopped onion, red bell pepper, grated ginger, and minced garlic.

Add the apple cider vinegar and brown sugar to the pot. Stir well to ensure the sugar begins to dissolve.
