Ingredients

  • 500 grams lean beef steak, diced
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 pieces celery sticks, chopped
  • 2 cloves garlic cloves, minced
  • 500 ml low-sodium beef stock
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons cornstarch
  • 100 grams low-fat Greek yogurt
  • 200 grams wholemeal flour
  • 1 teaspoon baking powder
  • 75 ml skimmed milk
  • 1 large egg white, lightly beaten
  • 0 to taste black pepper, to taste
  • 0 to taste salt, to taste

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large frying pan over medium heat, add the olive oil. Add the diced beef and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

Step 3

In the same pan, add chopped onion, carrots, celery, and garlic. Sauté for 5 minutes until vegetables start to soften.

Step 4

Return the beef to the pan, then pour in the beef stock. Add thyme leaves, salt, and pepper. Bring to a boil, then reduce the heat, cover, and simmer for 45 minutes.

Step 5

Mix cornstarch with a little water to make a slurry, then stir it into the beef mixture to thicken the sauce. Simmer for another 5 minutes. Remove from heat and let cool slightly.

For the pastry, combine wholemeal flour and baking powder in a bowl. Stir in the Greek yogurt and skimmed milk. Mix until a dough forms.

Roll the dough out on a lightly floured surface until it is about 3mm thick.

Transfer the beef mixture into a pie dish. Cover with the rolled pastry and trim any excess dough. Press the edges to seal and cut a few slits on top to allow steam to escape.

Brush the top with beaten egg white for a golden finish.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crisp.
