Ingredients

  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Creamy peanut butter (preferably reduced fat)
  • 0.25 cup Unsweetened applesauce
  • 0.5 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 1 large Egg

Directions

Step 1

Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, combine the creamy peanut butter, unsweetened applesauce, granulated sugar, and brown sugar. Mix with a hand mixer or a stand mixer on medium speed until creamy and well combined.

Step 4

Add the vanilla extract and the egg to the peanut butter mixture, and beat until thoroughly mixed.

Step 5

Gradually add the dry ingredients into the wet ingredients, mixing on low speed until just combined. Avoid over-mixing.

Step 6

Scoop about a tablespoon of dough and roll it into a small ball. Place each ball onto the prepared baking sheets, leaving about 2 inches of space between them.

Step 7

Using a fork, gently press down on each ball in a crisscross pattern to flatten them slightly.

Step 8

Bake cookies in the preheated oven for about 10 minutes, or until the edges are light golden brown. Keep an eye on them to avoid burning, as baking times can vary slightly.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store in an airtight container at room temperature for up to one week.
