Ingredients

  • 200 grams raw hazelnuts
  • 30 grams unsweetened cocoa powder
  • 40 grams powdered sugar
  • 1 teaspoon vanilla extract
  • 120 milliliters skim milk
  • 1 pinch salt

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Spread the hazelnuts evenly on a baking sheet and roast them in the oven for about 10 minutes, until fragrant and the skins begin to crack.

Step 3

Remove the hazelnuts from the oven and allow them to cool slightly. Once cool enough to handle, rub the hazelnuts between your hands or within a clean kitchen towel to remove the skins. Some skin may remain, but that's okay.

Step 4

Place the peeled hazelnuts in a food processor or high-speed blender. Process until they become a smooth paste, stopping occasionally to scrape down the sides as necessary. This may take several minutes.

Add the unsweetened cocoa powder, powdered sugar, vanilla extract, and pinch of salt to the hazelnut paste. Blend until well combined.

Slowly pour in the skim milk and continue to blend until the mixture is smooth and creamy. You may need to scrape down the sides of the container a few times to ensure everything is fully incorporated.
