Ingredients

  • 120 ml Freshly squeezed lemon juice
  • 2 tablespoons Lemon zest
  • 150 grams Granulated sugar
  • 2 tablespoons Cornstarch
  • 120 ml Water
  • 2 whole Large eggs
  • 2 whole Large egg yolks
  • 30 grams Unsalted butter

Directions

Step 1

In a medium-sized pot, combine the lemon juice, lemon zest, and granulated sugar. Stir until the sugar dissolves, then set aside.

Step 2

In a small bowl, whisk together the cornstarch and water until smooth and lump-free.

Step 3

In another bowl, beat the whole eggs and egg yolks until well combined.

Step 4

Slowly add the cornstarch mixture to the lemon mixture in the pot, stirring constantly.

Step 5

Place the pot over medium heat and stir continuously until the mixture just begins to thicken.

Step 6

Reduce the heat to low and gradually pour in the beaten eggs, stirring constantly to incorporate them without causing them to scramble.

Continue to cook over low heat, stirring constantly, until the curd thickens significantly and coats the back of a spoon. This should take about 7-9 minutes.
