Ingredients

  • 0.25 cup warm water
  • 1 packet active dry yeast
  • 0.5 cup pineapple juice
  • 0.25 cup fat-free evaporated milk
  • 2 tablespoons light brown sugar
  • 2 tablespoons unsweetened applesauce
  • 1 large egg
  • 1.5 cups whole wheat flour
  • 1.5 cups all-purpose flour
  • 1 teaspoon salt

Directions

Step 1

In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until the yeast becomes foamy.

Step 2

In a large mixing bowl, whisk together pineapple juice, fat-free evaporated milk, light brown sugar, unsweetened applesauce, and the egg.

Step 3

Add the foamy yeast mixture to the wet ingredients in the large mixing bowl.

Step 4

In another bowl, combine whole wheat flour, all-purpose flour, and salt.

Step 5

Gradually add the mixed dry ingredients to the wet ingredients, stirring well after each addition. The dough should just come together and be slightly sticky.

Step 6

Transfer the dough to a floured surface and knead for about 5-7 minutes until it's smooth and elastic.

Step 7

Place the kneaded dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 to 2 hours until it doubles in size.

Step 8

After the dough has risen, gently punch it down to release the air.

Step 9

Divide the dough into 12 equal pieces and shape each piece into a small ball.

Step 10

Place the dough balls in a 9x13 inch baking dish or on a parchment-lined baking sheet, spaced apart.

Step 11

Cover again with the kitchen towel and let the dough rise for another 30-45 minutes until the rolls have doubled in size.

Step 12

Preheat your oven to 375°F (190°C).

Step 13

Bake the rolls for 20-25 minutes, or until they are golden brown on top.

Step 14

Remove from the oven and let cool slightly before serving.
