Ingredients

  • 2 cups Fresh cherries
  • 2 cups Non-fat milk
  • 1 cup Fat-free half-and-half
  • 0.75 cup Sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Cornstarch
  • 0.25 teaspoon Salt

Directions

Step 1

Pit and chop the cherries into small pieces. Set aside 1/2 cup of chopped cherries.

Step 2

In a medium saucepan, combine the remaining 1.5 cups of cherries with sugar and a pinch of salt.

Step 3

Cook over medium heat, stirring occasionally, until the cherries release their juices and the sugar dissolves, about 5 minutes.

Step 4

In a small bowl, mix the cornstarch with 1/4 cup of the non-fat milk until smooth.

Step 5

Add the cornstarch mixture, the rest of the non-fat milk, and fat-free half-and-half to the saucepan with the cherry mixture.

Step 6

Continue to cook, stirring constantly, until the mixture is slightly thickened, about 5 minutes.

Step 7

Remove the saucepan from heat and stir in the vanilla extract.

Step 8

Let the cherry base cool to room temperature, then transfer it to a blender and blend until smooth.

Step 9

Pour the puréed mixture through a fine-mesh sieve into a large bowl to remove any remaining cherry pieces.

Step 10

Cover the bowl and chill in the refrigerator for at least 2 hours to overnight, until completely cold.

Step 11

Once chilled, set up your ice cream maker according to the manufacturer's instructions.

Step 12

Pour the cherry mixture into the ice cream maker and churn until it reaches a soft-serve consistency.

Step 13

During the last 5 minutes of churning, add the reserved 1/2 cup of chopped cherries.

Step 14

Transfer the churned ice cream to an airtight container and freeze for at least 2 hours for a firmer texture, or enjoy immediately for a softer consistency.
