Warm the skimmed milk until lukewarm, about 40°C (104°F). In a small bowl, dissolve the sugar and yeast in the warm milk. Let it sit for about 5 minutes until foamy.
In a large mixing bowl, sift together the all-purpose flour and salt. Create a well in the center.
Beat 2 eggs and mix them with the yeast mixture, light olive oil, and water. Pour this liquid mixture into the well created in the flour.
Using a wooden spoon or spatula, gradually incorporate the flour into the wet ingredients until a rough dough forms.
Turn the dough onto a lightly floured surface and knead for about 10 minutes until it becomes smooth and elastic.
Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Punch down the risen dough to release air. Divide the dough into 10 equal pieces and shape each piece into a ball. Place them on a baking sheet lined with parchment paper, ensuring they are spaced apart.
Cover the dough balls with a damp cloth and let them rise again for about 30 minutes.
Preheat your oven to 190°C (375°F).
If desired, whisk an egg yolk with a tablespoon of water and brush it over the tops of the buns for a glossy finish. Sprinkle sesame seeds on top if using.
Bake the brioche buns in the preheated oven for about 15-20 minutes, or until golden brown and hollow-sounding when tapped.
Allow the buns to cool slightly on a wire rack before serving.
