Ingredients

  • 500 g venison stew meat
  • 1 tbsp olive oil
  • 1 medium onion
  • 3 garlic cloves
  • 2 medium carrots
  • 2 celery stalks
  • 3 medium potatoes
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp thyme
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 2 tbsp fresh parsley

Directions

Step 1

Trim any visible fat from the venison stew meat and cut into bite-sized pieces.

Step 2

In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat.

Step 3

Add the venison and brown on all sides, about 5 minutes. Remove the venison and set aside.

Step 4

Peel and chop the onion and mince the garlic cloves. Add to the pot and sauté for 3-4 minutes until the onion is translucent.
