Ingredients

  • 500 grams lean ground turkey
  • 1 tablespoon olive oil
  • 1 large onion

  • 3 carrots
  • 3 celery stalks
  • 1 red bell pepper
  • 2 medium potatoes
  • 400 grams canned diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Dice the onion, mince the garlic, and chop the carrots, celery, red bell pepper, and potatoes into bite-sized pieces.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spoon, about 6-8 minutes.
