Ingredients

  • 500 grams Lean beef stew meat
  • 1 tablespoon Olive oil
  • 1 medium, diced Onion
  • 3 cloves, minced Garlic
  • 3 large, sliced Carrots
  • 2 stalks, sliced Celery
  • 2 medium, diced Potatoes
  • 4 cups Low-sodium beef broth
  • 1 Bay leaf
  • 1 teaspoon, dried Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Frozen peas
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat. Add the lean beef stew meat and brown on all sides. This will take about 5-7 minutes. Remove the beef from the pot and set aside.

Step 2

In the same pot, add the diced onion and sauté until it becomes translucent, about 3 minutes. Add the minced garlic and cook for an additional minute.

Step 3

Add the sliced carrots and celery to the pot and sauté for 5 minutes until they begin to soften.

Step 4

Return the browned beef to the pot. Stir in the diced potatoes, low-sodium beef broth, bay leaf, dried thyme, salt, and black pepper.

Step 5

Bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Simmer the stew gently for 1.5-2 hours, or until the beef is tender and the vegetables are cooked to your liking.

Step 6

In the final 10 minutes of cooking, add the frozen peas to the pot and stir them in, allowing them to cook through.

Step 7

Taste the stew and adjust the seasoning if needed. Discard the bay leaf.

Step 8

Garnish each serving with freshly chopped parsley before serving.
