  • 1 large bell pepper
  • 1 medium zucchini
  • 1 large carrot
  • 1 28-ounce can canned crushed tomatoes
  • 1 cup low-sodium chicken broth
  • 1 15-ounce can canned cannellini beans
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the turkey sausage links into 1-inch pieces.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Step 4

Add the sausage pieces and cook for about 5-7 minutes until lightly browned. Remove the sausage from the skillet and set aside.

Step 5

Dice the onion and mince the garlic cloves. Slice the bell pepper and zucchini into bite-sized pieces. Peel and thinly slice the carrot.

Step 6

In the same skillet, add the diced onion and minced garlic. Sauté for about 3 minutes until the onion is translucent.

Add the sliced bell pepper, zucchini, and carrot to the skillet. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are slightly softened.

Step 8

Drain and rinse the cannellini beans.

Step 9

In a large casserole dish, combine the sautéed vegetables, browned sausage, crushed tomatoes, chicken broth, cannellini beans, dried oregano, dried thyme, and black pepper. Stir well to combine.

Step 10

Cover the casserole dish with its lid or aluminum foil.

Step 11

Bake in the preheated oven for 25-30 minutes until the casserole is bubbling and the flavors are well combined.

Step 13

Sprinkle chopped fresh parsley over the top before serving for added freshness and flavor.
