  • 2 stalks celery stalks

  • 4 cups low-sodium beef broth

  • 1 tablespoon worcestershire sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Dice the lean beef stew meat into 1-inch cubes if not already prepared.

Step 2

Peel and chop the potatoes into 1-inch cubes.

Step 3

Peel and slice the carrots into rounds.

Step 4

Chop the celery stalks and onion into small pieces.

Step 5

Mince the garlic cloves.

In a large pot or Dutch oven, heat the olive oil over medium-high heat.
