Ingredients

  • 1 cup green lentils

  • 1 15-ounce can canned diced tomatoes
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 2 cups fresh spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice

Directions

Step 1

Rinse the lentils under cold water and set aside.

In a large pot, heat olive oil over medium heat. Add the chopped onions and sauté for 5 minutes until soft.
