Ingredients

  • 500 grams lean beef stew meat
  • 1 tablespoon olive oil
  • 1 large onion
  • 2 large carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 250 grams mushrooms
  • 4 cups low sodium beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Trim any excess fat from the beef stew meat and cut into 1-inch cubes.

Step 2

Heat olive oil in a large pot over medium-high heat. Add the beef in batches and brown on all sides. Remove and set aside.

Step 3

Chop the onion, slice the carrots and celery, and mince the garlic.

Step 4

Add the onion, carrots, and celery to the pot. Sauté for about 5 minutes until the onion is translucent, stirring occasionally.

Slice the mushrooms and add them to the pot along with the minced garlic. Cook for an additional 3 minutes.
