  • 4 medium Red potatoes, cubed
  • 4 cups Low-sodium beef broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 Bay leaf
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the beef stew meat to the pot, season with salt and black pepper, and brown on all sides. This should take about 5-7 minutes.

Once browned, remove the beef and set aside.
