  • 4 cups low-sodium beef broth

  • 2 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Trim excess fat from the beef chuck roast and cut it into 1-inch cubes.

Step 2

In a large pot, heat 2 tablespoons of olive oil over medium-high heat.

Add the beef cubes to the pot in batches, browning them on all sides. Remove beef and set aside on a plate.
