Ingredients

  • 2 pounds Beef short ribs
  • 1 tablespoon Olive oil
  • 1 large Onion, diced
  • 2 medium Carrots, sliced
  • 2 medium Celery stalks, sliced
  • 4 Garlic cloves, minced
  • 8 cups Low-sodium beef broth
  • 2 cups Tomatoes, diced
  • 2 medium Potatoes, diced
  • 2 Bay leaves
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh parsley, chopped

Directions

Step 1

Trim excess fat from the beef short ribs for a lower fat content. Rinse and pat dry with paper towels.

Step 2

Heat the olive oil in a large pot over medium-high heat. Add the beef ribs and brown on all sides, about 5-7 minutes. Remove the ribs and set aside.

Step 3

In the same pot, add the diced onion, sliced carrots, and celery. Sauté for 5 minutes until the vegetables are softened.
