Ingredients

  • 1 pound Lean beef stew meat
  • 1 tablespoon Olive oil
  • 1 large Onion, diced
  • 3 Garlic cloves, minced
  • 2 medium Carrots, peeled and sliced
  • 2 Celery stalks, sliced
  • 14 ounces Crushed tomatoes
  • 4 cups Low-sodium beef broth
  • 15 ounces Canned kidney beans, drained and rinsed
  • 15 ounces Canned black beans, drained and rinsed
  • 1 Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot over medium-high heat.

Step 2

Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

Step 3

In the same pot, add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another 1 minute, until fragrant.

Add the sliced carrots and celery to the pot, and sauté for 5 minutes, until they start to soften.

Return the beef to the pot, and stir in the crushed tomatoes and beef broth. Bring the mixture to a boil.
