Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 cups skim milk
  • 0.5 cup unsweetened applesauce
  • 4 large egg whites
  • 1 medium banana, mashed
  • 0.25 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 cup fresh blueberries

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish with non-stick cooking spray.

Step 2

In a large mixing bowl, combine the rolled oats, skim milk, and unsweetened applesauce. Stir well to ensure the oats are fully coated.

Step 3

In another bowl, whisk together the egg whites, mashed banana, brown sugar, and vanilla extract until well blended.

Step 4

Pour the wet mixture into the bowl with the oats and mix thoroughly.

Step 5

Add the baking powder, ground cinnamon, and salt into the oatmeal mixture. Stir until all ingredients are well incorporated.

Step 6

Gently fold in the fresh blueberries, being careful not to crush them.

Step 7

Pour the oatmeal mixture into the prepared baking dish and spread it evenly with a spatula.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 9

Allow the baked oatmeal to cool for a few minutes before serving.

Step 10

Serve warm. Store any leftovers in an airtight container in the refrigerator for up to five days.
