Ingredients

  • 300 grams all-purpose flour
  • 100 grams whole wheat flour
  • 7 grams active dry yeast
  • 240 milliliters low-fat milk, warm
  • 60 grams honey
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 80 grams ground hazelnuts
  • 60 grams low-fat yogurt
  • 30 milliliters olive oil

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, and salt. Stir well to mix evenly.

Step 2

In a smaller bowl, dissolve the yeast into the warm low-fat milk. Let it sit for about 5 minutes until it becomes foamy.

Step 3

To the yeast mixture, add the honey, lightly beaten egg, vanilla extract, low-fat yogurt, and olive oil. Mix until combined.

Step 4

Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix with a wooden spoon until the dough begins to come together.

Step 5

Add the ground hazelnuts and integrate them into the dough, kneading until everything is well incorporated and the dough is smooth and slightly elastic, about 5 to 7 minutes.

Step 6

Place the dough in a lightly greased bowl, cover with a cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Step 7

After the dough has risen, punch it down to release some of the air and divide it into 12 equal pieces.

Step 8

Shape each piece into a bun by pulling the dough edges into the center to form a smooth top. Place the buns on a baking sheet lined with parchment paper.

Step 9

Cover the buns again with a cloth and let them rise for another 30 to 40 minutes.

Step 10

Preheat the oven to 180°C (350°F).

Step 11

Brush the tops of the buns with a little bit of low-fat milk to give them a nice glossy finish.

Step 12

Bake the buns in the preheated oven for 20 to 25 minutes, or until they are golden brown and sound hollow when tapped on the bottom.

Step 13

Allow the buns to cool on a wire rack. Serve warm or at room temperature.
